The Japanese use these fragrant, iron-rich leaves as a garnish for cold noodle and tofu dishes when young, and when mature to wrap onigiri (rice balls), fried in tempura batter as a crispy side dish or even as a pizza topping.
It’s almost impossible to buy this seasoning fresh in the UK and it’ll add some authentic Japanese flavour to sushi, salads, curries and stir fries.
